Healing Bone Broth (GF & DF)

Ingredients
- Free range/organic whole chicken carcass (3 chicken backs works too)
- 3 cups of chopped carrots (for sweetness)
- 1 Ginseng root (medium to large)
- Filtered water
- 2 tbsp of apple cider vinegar

Directions
- Boil Ginseng for 20 minutes in small pot of water (keep water)
- Ginseng root is very hard to cut, this will soften the root for ease of cutting
- While Ginseng cooks, cut carrots
- Put chicken carcass into pressure cooker
- Add cut ginseng & carrots
- Cover ingredients with Ginseng water (use filtered water if you need more). Cover just enough so that everything is covered, not more
- Add vinegar, cover cooker
- Cook for 1 hr
